How this is calculated

How to use the result

Two numbers matter most here. Cost per unit is what this recipe actually costs you to produce — every ingredient plus packaging, split across how many units the batch makes. That number is your floor: sell below it and every sale loses money before you've paid for anything else (labor, rent, card fees). Suggested price is what to charge to protect the profit margin you told the calculator you want, given that cost floor.

If the suggested price is higher than what your market will actually pay, you have exactly two levers: lower your cost per unit (cheaper ingredients, less packaging, a bigger batch that uses ingredients more efficiently) or accept a lower margin. This calculator won't tell you which is right for your business — that depends on your market — but it will show you honestly what each choice costs you in profit.

How this calculator works

Every ingredient row asks for the total dollar cost of the amount you're using in this batch, not a per-pound price — so if a recipe uses 2.5 lb of cream cheese and that costs $19.50 total, enter $19.50. The calculator adds up every ingredient's cost, adds your packaging cost, and divides by how many units the batch makes. That's your true cost per unit. From there, the suggested price is calculated so that, after subtracting that cost, what's left over equals your target margin as a percentage of the price — not of the cost. That distinction matters: a 65% margin on price is a different (larger) markup than a 65% markup on cost, and this calculator always solves for margin on price, since that's the number that determines what actually lands in your pocket per dollar of revenue.

Worked example

The example loaded above is a real batch of Strawberry Cheesecake Slices, making 12 slices:

  • Cream Cheese: $19.50
  • Graham Cracker Crumbs: $4.90
  • Fresh Strawberries: $12.17
  • Packaging (boxes, labels): $0.35

Total ingredient cost is $36.57. Add packaging of $0.35 and the batch costs $36.92 to produce. Divide that across 12 slices and each slice costs $3.08 to make — that's the cost per unit. At a 65% target margin, the suggested price is $3.08 ÷ (1 − 0.65) = $8.80. Selling at $8.80 means $5.72 of profit on every slice, before labor and any other overhead. Notice that Cream Cheese alone is more than half of total cost here — that's exactly the kind of thing the Insights panel above flags automatically once a single ingredient crosses roughly a third of total cost, because it's the first place to look if you need to bring the price down.

Common mistakes

  • Forgetting packaging entirely. A $0.35 box looks trivial per slice, but across a thousand units a year it's real money — and skipping it means your "cost per unit" understates your actual cost.
  • Using stale ingredient prices. Produce and dairy prices move. A cost calculation from six months ago can be meaningfully wrong today — re-check prices when they've likely shifted, not just once at recipe creation.
  • Confusing margin with markup. A 65% margin and a 65% markup are not the same price. This calculator always computes margin on the selling price, which is the number that determines your actual take-home percentage — using markup-on-cost math here would understate the price you need to charge.
  • Leaving labor out of the pricing decision. This calculator intentionally covers ingredients and packaging only, so the math stays simple and auditable — but don't mistake "cost per unit" here for your fully-loaded cost. Pair it with the Labor Cost Calculator.
  • Not re-running the numbers after a recipe change. Swap an ingredient, change a portion size, or switch suppliers, and your true cost per unit moves — update the ingredient rows rather than mentally adjusting the old result.

Does this include labor cost?
No — this calculator covers ingredients and packaging only, so the math stays simple and easy to audit line by line. Use the Labor Cost Calculator to add your time on top of this cost per unit for your fully-loaded cost.
What if my recipe doesn't split evenly into whole units?
Enter the number of units the batch realistically yields (it doesn't need to be a round number if you're tracking fractional yield elsewhere) — the calculator divides total cost by whatever number you enter, so partial units are handled the same way as whole ones.
Why is the suggested price higher than "cost times margin"?
Because margin here is calculated on the selling price, not on cost. A 65% margin means 65% of what you charge is profit — which requires solving cost ÷ (1 − margin), not cost × (1 + margin). The second formula (markup-on-cost) would leave you short of your actual target margin.
Does this account for spoilage or waste?
Not directly — enter the actual dollar cost of what you use, including any trim or waste you already account for when buying ingredients. If you regularly lose a known percentage of an ingredient to spoilage, build that into the quantity/cost you enter for that row.
Can I use this for a food-truck or catering menu item too?
